Pinot Noir
Description
Colour: Light ruby red.
Aroma: Delicate notes of forest floor, fresh red fruit and subtle spices.
Palate: A light-bodied, fruity and elegant wine with soft tannins and pleasant freshness. Pinot Noir impresses with its delicate character, balance and distinct varietal expression.
Food pairing: Tuna steak, oven-baked oily fish, beef fillet (filet mignon), boiled meat.
Serving temperature: 16 °C.
Method of production
Vineyard: Zdenc, Sv. Helena
Soil: Ponca (marl and sandstone)
Training system: Single Guyot, 4,000 vines/ha
Yield: Up to 6,000 kg/ha
Vinification: The grapes are hand-harvested, destemmed and macerated for 10–12 days. Low-temperature maceration of whole berries helps preserve the variety's characteristic primary fruit aromas. After pressing, the wine is transferred to stainless steel tanks, where fermentation is completed. Malolactic fermentation follows, adding softness and elegance to the wine. Bottling takes place in summer of the year following the harvest.
